Cranberry Pork Deliciousness

SOME people might say that using onion soup mix in crock pot recipes is a cop-out. Maybe I thought that myself, but it is seriously a great all-around seasoning choice. Plus, it was on sale at the grocery store.

Yesterday I made:

Cranberry Pork Tenderloin
2 lb. tenderloin
1 can whole berry cranberry sauce
1/2 C. water
1/2 C. apple cider
1 packet onion soup mix
Salt
Pepper
2 T. corn starch
2 T. water

Brown tenderloin on all sides in a skillet, seasoning with salt and pepper. Place tenderloin in crock pot.

Mix together cranberry sauce, water, cider and onion soup mix. Pour mixture over tenderloin. Cook on low for 8 hours.

Remove tenderloin from crock pot. Spoon about 2 or 3 cups of remaining sauce into a small saucepan. Bring to a boil. Mix together corn starch and water and pour into sauce, stirring. Continue simmering until sauce has thickened into a gravy. Serve gravy over sliced* tenderloin.

I served this with sweet potato fries and peas. It was a smashing success as dinners go.

Then this morning I made us blueberry pancakes from a recipe on All-Recipes. See, when I don't have to work like crazy, I can be little wifey extraordinaire.

On the other hand, we get bonuses based on our quarterly billable hours and based on the fact that I billed over 200 hours in the first 5 weeks of the quarter, and the work is really ramping up, I think I'll be getting a bonus.

* In reality it's super tender and sort of falls apart into not-so-neat slices. But it tastes so good that it doesn't really matter what it looks like.

Funny that you just posted another tenderloin recipe. I am going to try your apple tenderloin recipe tomorrow! I never cook with pork so this will be all important to see if I try the other white meat again! Thanks for sharing them!

Mmmm, we're always ready to try a new cranberry recipe. Josh traces his cranberry obsession to the wild cranberries that grew around his house when he was a kid, and I trace mine to . . . being married to Josh.
